I can honestly say that I have never had (or I don't remember) having sweet potatoes except at Thanksgiving. I know they are considered "super food" because of their exceptional health benefits. Here's a few facts I found on the web:
*1 potato provides:
-263% daily value of vitamin A
-30% daily value of vitamin C
-10-15% of daily value of copper, vitamin B6, potassium, iron
-15% daily value of dietary fiber
*Sweet potato contain unique root storage proteins that have been observed to have significant antioxidant capacities
*As an excellent source of vitamin A (in the form of beta-carotene) and a very good source of vitamin C, sweet potatoes have healing properties as an antioxidant food. Both beta-carotene and vitamin C are very powerful antioxidants that work in the body to eliminate free radicals. Free radicals are chemicals that damage cells and cell membranes and are associated with the development of conditions like atherosclerosis, diabetic heart disease, and colon cancer. Since these nutrients are also anti-inflammatory, they can be helpful in reducing the severity of conditions where inflammation plays a role, such as asthma, osteoarthritis, and rheumatoid arthritis.
Wow! I can't believe what I have been missing all these years! They taste exceptionally delicious on top of all these health benefits. To cook I simply poked a few times with a fork and threw in the microwave for 5-10 min. I did top mine with just a little butter and cinnamon sugar, but I honestly think they are sweet enough to do without the added toppings next time! Eat your heart out!
